Sugar Buns

8 oz flour , 1/4 cup sugar, 3 tsp baking powder, 1 egg, 1/4 tsp salt, 1/3 cup milk, 2 oz butter, 1/2 cup sultanas.

Sift flour, baking powder & salt.

Chop in butter.

Add Sugar.

beat egg & milk together, add to the dry ingredients to make a soft dough.

Turn onto a floured board and make into 12 buns, ( Spoonfuls )

Dip into egg and milk extra, put them onto a papered tray, and sprinkle with sugar.

Bake in a moderate  to hot oven.

Butter when cold.

Cheese Cakes

Flaky Pastry, Raspberry jam,   4oz Butter,  4 oz sugar,  2 eggs, 5 oz flour, 1 tsp baking powder.

Roll-out pastry,  and line about 21 patty tins.  Put a spoonful of raspberry jam on top of the pastry.

Cream butter and sugar.  Beat eggs and add alternatively with sifted flour and baking powder.

Put a spoonful of mixture on top of jam.  Place a small scrap of pastry on cake mixture.

Bake 20 minutes at 200C (400F)

Queen Cakes

4 oz butter,  4 oz sugar,  2 eggs,  6 oz flour, 1 tsp baking powder, 2 oz currants / sultanas.

Cream butter and sugar. Beat eggs until fluffy and add alternately with the sifted flour and baking powder.

Put spoonfuls into patty tins and bake for 10-12 at 200c (400F)

Sultana Cake

1 lb sultanas,   12 oz castor sugar,  8 oz butter, 12 oz  flour,  3 eggs , 1 tsp baking powder, 1 tsp almond essence.

Line a 10 inch cake tin with two thicknesses of newspaper and one layer of grease-proof paper.

Boil sultanas,  in sufficient water to cover,  for 8 minutes. Strain the water off and cut butter into hot sultanas.

Beat eggs with sugar until creamy, add the sultanas and butter. Sift in flour and baking powder. Add essence.

Fill prepared tin with mixture and bake in a slow oven ( 300 – 325F) for 1 & 3/4 hours.

Leave to cool in tin.

Orange Cakes

2 oz butter,  4 oz castor sugar, grated rind of 1/2 orange, 1 tbsp orange juice, 1 tbsp warm water, 2 eggs, 3 oz flour,

1 oz cornflour, 1 tsp baking powder.

 

Cream butter and sugar, add rind & juice.  Add beaten eggs, alternately with sifted dry ingredients, lastly add warm water.

Bake 12 minutes in greased patty tins , or paper cases. When cold ice with Orange Butter Icing.

Orange Butter Icing

1 oz butter, 6 oz butter, grated rind and juice of 1/2 an orange.

mix all together.

Almond Biscuits

4 oz butter, 4 oz sugar, 1 small egg, 6 oz flour, 1 tsp baking powder, almond essence.

Cream butter & sugar together along with the essence.

Add egg and beat well.  Mix in sifted dry ingredients.

Roll into ball, place on a greased tray and put 1/2 an almond on top of each biscuit. ( I put a spoonful of raspberry jam on top instead of the nut.)

Bake 15 -20 minutes at 350F

Afghans

7 oz butter, 6 oz flour, 1 oz cocoa, 3 oz sugar & 2 oz cornflakes.

soften butter, add sugar and beat to a cream.

Add flour , cocoa and lastly cornflakes.

Put teaspoonfuls on to a greased tray and bake 15 minutes at 350F.

When cold ice with chocolate icing and put small pieces of chopped walnut on top.

Lolly Cake

4 oz butter, 1/2 tin condensed milk, 1 packet of Malt biscuits (250g), 1 packet fruit puffs (180g)

 

Chop fruit puffs into 3. Crush Malt biscuits.

Warm butter and condensed milk together and when blended add to biscuits  and puffs. Mix together and form into a roll and roll in coconut.  Refrigerate  to set.

Cut into slices when cold.

Honey Bubbles

Boil together, for 5 – 6 minutes (without burning)

4 oz butter, 3 tbsp  honey, 3 tbsp brown sugar.

 

Mix 4 – 5 cups of rice bubbles into syrup mixture , mix well and then press into a square tin.

Cut into pieces while still warm and then leave to set.

Fruit Loaves – Mrs F W Shallard

1 & 1/2 cups sugar, 1 tbsp syrup,  2 tbsp butter, 2 cups boiling water.

Put in pot and bring almost to the boil, then add 3/4 lb (12 oz) mixed fruit.

Leave to cool and then add 3 cups of flour , 2 tsp cinnamon, 2 tsp baking soda & 1 tsp of ginger. Mix well and then put into  2 greased loaf tins and bake  for 1 hour at 350F.
