Self- saucing Chocolate Pudding

1 cup Self raising flour                                                         2 tbsp Cocoa

1/2 tsp Salt                                                                           3/4 cup Sugar

1/2 cup Milk                                                                         2 tbsp Melted butter

1 tsp Vanilla

Topping

3/4 cup Brown sugar                                   2 tbsp Cocoa                    1 & 1/2 Boiling water

 

Method

  1.  Sift flour, cocoa  and salt into a mixing  bowl.
  2.  Stir in sugar.
  3.  Stir in the milk, butter & vanilla.
  4. Turn mixture into a microwaveable ring dish.
  5.  Blend topping mixture together and pour over the batter.
  6.  Cover with paper  and cook on high for 10 minutes or until the edges of the mixture  are just coming away from the sides.
  7. Serve warm, with cream or ice cream.
Paua Patties

Small batch

1 cup of minced paua, 1 egg, 1/2 onion , 50 mls milk, 1 cup self raising flour, 1 tsp salt, 1 tsp baking powder.

Large batch (Bulk)

10 cups minced paua (2.8kg approx), 4 onions sliced, 12 eggs, 500 /600 mls milk, 5 cups self-raising flour, 3 tsp baking powder, 3 tsp salt.

 

 

Beat eggs & milk, mix paua and onion in well. Add dry ingredients and mix well to a sticky runny paste.

Fry spoonfuls in hot oil until golden brown on the outside and cooked in the middle.

Bulk Marinade for Venison.

250 mls Lemon Juice, 300 mls soy sauce, 300 mls oil, 1 cup of brown sugar, 1 tbsp crushed ginger, 1 tbsp crushed garlic, a shake or 2 of garlice powder, spoonful of salt to taste.

Mix all together, place the meat in and leave for at least 2 or 3 hours. Overnight is better.

Mince Chow Mein

500g Mince , 1 cup of sliced green beans, 1/4 cup Cabbage (shredded), 2 carrots sliced thinly, 1 onion sliced, 1 tsp curry, 1 tbsp rice  2 -2 1/2 cups of water, 1 pkt Maggi chicken noodle soup.

Brown the mince in pan , add all the other ingredients stirring the water in last. mix well and cook uncovered over moderate heat for 30-40 minutes. Stir at times and add more water if necessary.

Serve with fluffy boiled rice.

Spaghetti Bolonaise

8oz mince, 1/4 tsp mixed spice, 1 tsp each curry & mustard, 4 oz grated cheese, 1 chopped onion, 4 oz uncooked spaghetti, 1 tin tomato soup.

Cook mince with onion until cooked, then add all the seasonings and soup. Heat all together, and thicken meat if necessary.

Cook spaghetti in hot salted water for 8 -10 minutes. Drain and keep warm.

Put spoonfuls of spaghetti onto plates and put meat mixture on top. Sprinkle with the grated cheese. Serve.

Cheese Souffle

2 oz flour, 1/2 a tsp salt and pepper, 1 oz butter, 6 oz grated cheese, 2 cups of milk 1/2 a teaspoon of mustard. 4 eggs.

Make white sauce with the butter, flour and milk, simmer for five minutes. Leave to cool.

Mix the salt, pepper, mustard and cheese into sauce and then the egg yolks.

Beat the egg whites until fluffy and stiff, fold gently into the sauce mixture.

Turn into a greased dish, cook for 30 minutes at 300F until brown. leave for a few minutes and then serve.

 

Pizza

1 & 3/4 tsp dried yeast, 3/4 cup warm water, 1/4  tsp sugar, 2 cups flour, 1/2 tsp salt, 2 tbsp oil.

To make base, sprinkle yeast on warm water. Stand for 2 minutes, then stir in sugar. leave in a warm spot until the mixture starts bubbling.

Place flour and salt in a bowl, stir in the oil. When yeast mixture is ready, stir into Flour. Mix well and then knead until shiny. place in a greased bowl, cover and leave in a warm place until doubled in size – about an hour.

Place into a tray and cover with favorite fillings.

Bake fairly low in oven at 180C  for about 20 -25 minutes until crust is lightly browned and filling bubbly hot.

Scotch eggs

3 hard boiled eggs, 1/2 lb sausage meat, breadcrumbs, 1 onion, 1 crushed clove of garlic, salt & Pepper, 1 beaten egg.

Chop onion and cook with the crushed garlic and a small amount of water, until soft. Drain and add to sausage meat.

Cover the cooked eggs with the meat, making it a ball shape. Dip them in the beaten egg and then roll them in the breadcrumbs.

Deep fry until sausage meat is cooked and golden.

Scalloped Ham or Poultry

Dice up leftover chicken or ham.

Dice up left over vegetables.

For a savory sauce, melt 2 oz butter, add 1 oz flour, stir in 1/2 cup of Chicken stock and thicken. Add a further 1/2 cup of chicken stock and stir until combined and thickened again.

For buttered breadcrumbs, melt butter and toss in breadcrumbs. Combine.

Place chicken and vege in casserole dish, pour over thickened sauce and scatter over the breadcrumbs.

Cook in oven 375F until topping is golden brown and meat mixture is heated through.

Home-Fried Spaghetti

Cook sufficient spaghetti (8oz Approx) that has been broken into 2 inch lengths (5 cm). Add to 4 beaten eggs and add cheese , onion, chopped bacon , salt and pepper.

Fry  in a pan until starting to set , cut into portions and then flip over to cook the other side.
