Banana Cake

4oz butter, 1 cup sugar, 2 mashed bananas,  1 tsp baking powder, 1 tsp baking soda dissolved in 2 tbsp milk, 2 eggs,

pinch of salt, 1 & 1/2 cups flour, 1 tsp vanilla.

Cream butter and sugar, add eggs then add the bananas, vanilla and dry ingredients. Lastly add milk and soda.

Bake in a moderate oven for 3/4 hour.

Ice with chocolate icing.

Hokey Pokey Biscuits

4 oz butter, 4 oz sugar, 1 dsp syrup, 3 dsp milk,  1 heaped cup flour,  1 small teaspoon baking soda, 1 cup sultanas.

 

Heat milk and syrup, add soda. cream butter and sugar, add the syrup mixture and combine. Lastly add the flour and sultanas. Put in tsp lots on cold tray , flatten with fork.

Cook in moderate oven till golden brown.

Instant Pudding Biscuits

6 oz butter, 1 cup sugar, 1 egg, 1 pkt instant pudding (butterscotch flavour) , 2 cups flour, 1 cup sultanas

1 tsp baking powder, 3 tbsp cornflour.

 

Cream butter and sugar, add egg and combine. Add dry ingredients and mix together.

Roll into small balls and flatten.

Bake in a moderate oven 12 – 15 minutes

Bran Muffins

1 cup Bran               3/4 cup milk         1 tbsp golden syrup

Soak for five minutes.

Add 1 egg,    3/4  cup Flour    1/2 cup  sugar    1 tsp baking soda  & 1/4 tsp salt.

 

Spoon into muffin tins and cook for 20 minutes at 180c  (350 F)

Spicy Apple Cake

130g Butter              1 cup sugar        2 Lge Apples (grated)         1 & 1/2 Cups Flour         2Eggs      1 tsp Baking Soda

1 tsp Mixed spice         2 tsp cinnamon         Lge pinch salt.

Topping

2 Tbsp Butter     1/2 cup rolled oats       4 Tbsp  Brown sugar        1 tsp cinnamon

 

Melt butter in a pot , add grated apple and sugar, add eggs & beat well.

Sift dry ingredients and fold into butter mixture.

Spread into a greased tin.Mix topping ingredients and sprinkle over batter.

Cook at 180c for 30-40 minutes.

Lemon Blondi

Melted Butter to Grease

150g White Chocolate , coarsely chopped.

100g butter, chopped

2 eggs

1 teaspoon vanilla essence

Juice of 2 lemons

190g (1& 1/4 cups) plain flour

1/2 cup coconut

155g (3/4 cup) caster sugar

1 tsp  baking powder

1/4 tsp salt

Finely grated zest of 2 lemons

Icing sugar to dust.

Instructions

  1. Preheat oven to 160C
  2. Brush a 16 x 26 cm square tin with melted butter and line with non-stick baking paper, allowing the sides to overhang.
  3. Pop the chocolate and butter in a large heatproof bowl over a saucepan half filled with simmering water (make sure the bowl doesn’t touch the water).
  4. Use a spoon to sit until the chocolate melts and mixture is smooth.
  5. Leave to cool for a few minutes.
  6. Whisk the eggs, vanilla essence and lemon juice together in a bowl or jug.
  7. Stir the egg mixture into the chocolate mixture until well combined.
  8. Sift the flour  and baking powder into a bowl.
  9. Add the salt , sugar, coconut and lemon zest.
  10. Add the chocolate mixture and stir until combined.
  11. Pour into the tin.
  12. Bake for 35 minutes or until crumbs cling to  a skewer inserted into the centre (do not overcook!).
  13. Set aside in the pan for 6 hours or overnight.
  14. Dust with Icing sugar.
Chocolate Christmas Pudding

3 slices of Molenburg  bread

1/2 cup of brown sugar

4 Tbsp drinking chocolate

Whipped cream

Tear bread into chunks, add sugar  and drinking chocolate, and process in food processor until well combined.

Layer with whipped cream in a bowl, or in small individual glasses.

Decorate with chocolate shavings and leave to cool in fridge.

Pineapple Cheesecake

Base

4 oz butter, 1 pkt biscuits ( crumbed ) 1/4 sugar.

Melt butter  and add to breadcrumbs  and sugar. Combine well and press into a springform tin that has been lined and press until base is firm . Chill  until needed.

Filling

1 425 can  crushed pineapple, 1/4 cup sugar, 1 lemon jelly,  250g cream cheese,   1/2 400 can evaporated  milk (well chilled).

Drain the juice   from the pineapple and heat with the jelly until it is dissolved. Leave to cool.

Beat  the well chilled milk until thick & fluffy , gradually add the second lot of sugar,  then add in the jelly mixture, cream cheese & pineapple.

Pour mixture over the base and leave to set in the refrigerator.

Simple Rice Pudding

1/2 cup short  grain rice, 1/2 cup sultanas , 4  cups of milk,   1/8 tsp salt   2-3 tbsp  Sugar, 1  tbsp butter, nutmeg.

In a baking dish place the rice  and sultanas  . Pour milk over rice, stir in salt , sugar and butter. Sprinkle with grated nutmeg.

Place in oven at 160C and bake for one to one and half hours. Stir occasionally.

Bread and Butter Pudding

900mls milk,   4 eggs,    1/4 sugar, 1 tsp vanilla essence, 6 -8 slices of bread 1-2 days old, butter, 1/2 a cup sultanas,   grated nutmeg,  1 tbsp demera sugar.

Heat milk until almost boiling, then aside for 10 minutes. Preheat oven to 170C.

Grease a shallow baking  dish and stand in a roasting pan of water, so water comes up half way up the sides.

Beat the eggs lightly with the sugar. Butter bread ( remove crusts if desired) , then cut into small squares. Sprinkle half of the sultanas in the baking dish, arrange half the bread on top. Add remaining sultanas  and bread. Strain milk into eggs and  beat just to blend. Pour over the bread. Sprinkle with grated nutmeg and demera sugar. Bake at 170c for 46-60 minutes.

Serve hot
